Recipe for Masala Dosa: A Classic South Indian Breakfast
Masala Dosa is a popular South Indian breakfast, known for its crispy, golden exterior and flavorful potato filling. It’s perfect when served with coconut chutney and sambar.
Ingredients
For Dosa Batter:
- 1 cup rice
- ½ cup urad dal (split black gram)
- ¼ cup poha (flattened rice)
- Salt to taste
- Water for soaking and grinding
For Potato Masala Filling:
- 3-4 medium-sized potatoes (boiled and mashed)
- 1 onion (thinly sliced)
- 2 green chilies (chopped)
- 1 tsp mustard seeds
- 1 tsp chana dal (split chickpeas)
- A few curry leaves
- ½ tsp turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tbsp oil
Instructions
Step 1: Prepare the Dosa Batter
- Soak the rice, urad dal, and poha in water for 4-6 hours.
- Drain the water and grind the mixture into a smooth batter using a little water. The consistency should be similar to pancake batter.
- Add salt and let the batter ferment overnight or for 8-10 hours.
Step 2: Prepare the Potato Masala
- Heat oil in a pan and add mustard seeds. Once they splutter, add chana dal, curry leaves, and green chilies.
- Add sliced onions and sauté until they turn translucent.
- Add turmeric powder, salt, and mashed potatoes. Mix well and cook for 2-3 minutes.
- Garnish with fresh coriander leaves and set aside.
Step 3: Make the Dosa
- Heat a flat, non-stick pan on medium heat. Lightly grease it with oil.
- Pour a ladleful of dosa batter onto the center of the pan and spread it in a circular motion to make a thin layer.
- Drizzle a few drops of oil around the edges and cook until the dosa turns golden brown and crispy.
- Place a portion of the potato masala filling in the center, fold the dosa, and remove from the pan.
Step 4: Serve
Serve the masala dosa hot with coconut chutney and sambar for a traditional South Indian breakfast experience.
