Recipe for Masala Dosa: A Classic South Indian Breakfast

Masala Dosa is a popular South Indian breakfast, known for its crispy, golden exterior and flavorful potato filling. It’s perfect when served with coconut chutney and sambar.

Ingredients

For Dosa Batter:
  • 1 cup rice
  • ½ cup urad dal (split black gram)
  • ¼ cup poha (flattened rice)
  • Salt to taste
  • Water for soaking and grinding
For Potato Masala Filling:
  • 3-4 medium-sized potatoes (boiled and mashed)
  • 1 onion (thinly sliced)
  • 2 green chilies (chopped)
  • 1 tsp mustard seeds
  • 1 tsp chana dal (split chickpeas)
  • A few curry leaves
  • ½ tsp turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 2 tbsp oil

Instructions

Step 1: Prepare the Dosa Batter
  1. Soak the rice, urad dal, and poha in water for 4-6 hours.
  2. Drain the water and grind the mixture into a smooth batter using a little water. The consistency should be similar to pancake batter.
  3. Add salt and let the batter ferment overnight or for 8-10 hours.
Step 2: Prepare the Potato Masala
  1. Heat oil in a pan and add mustard seeds. Once they splutter, add chana dal, curry leaves, and green chilies.
  2. Add sliced onions and sauté until they turn translucent.
  3. Add turmeric powder, salt, and mashed potatoes. Mix well and cook for 2-3 minutes.
  4. Garnish with fresh coriander leaves and set aside.
Step 3: Make the Dosa
  1. Heat a flat, non-stick pan on medium heat. Lightly grease it with oil.
  2. Pour a ladleful of dosa batter onto the center of the pan and spread it in a circular motion to make a thin layer.
  3. Drizzle a few drops of oil around the edges and cook until the dosa turns golden brown and crispy.
  4. Place a portion of the potato masala filling in the center, fold the dosa, and remove from the pan.
Step 4: Serve

Serve the masala dosa hot with coconut chutney and sambar for a traditional South Indian breakfast experience.
